Somebunny’s Easy Pancake Recipes (gluten, sugar, and dairy free)

Happy Easter! We celebrated today with an Easter egg hunt, bunny crafts, and a bunny pancake brunch! These adorable little bunnies are super easy to make and even more delicious to eat. Simply make your pancake shapes and add on banana slices and blueberries. Below, I have shared our two favourite pancakes recipes that are gluten, sugar, and dairy free. These deliciously wholesome pancakes are super easy to make - just put all of the ingredients in a blender, blend, cook, and enjoy!

Our family has been gluten, dairy, and sugar free for over 10 years now. In the beginning, it was challenging to find suitable recipes but over the years we've created our own recipes that are delicious and wholesome!

Recipe 1: Oatmeal Banana Pancakes

Ingredients:
- 2 bananas
- 2 eggs
- 1/2 cup quick oats
- 1/2 tsp baking powder
- pinch of salt
- dash of cinnamon (optional)
- coconut oil (for cooking)

Directions:

1. Heat up your pan on low and melt coconut oil to coat base of pan. We love using cast iron pans!

2. Place wet ingredients into the blender. Blend. Add dry ingredients and blend again.

3. Cook your pancakes. Flip once you see bubbles in the pancakes and the edges are golden brown. 

4. If making bunnies, use a tablespoon to scoop the pancake batter and make your shapes. Once constructed, add the blueberries and bananas.

5. Enjoy!

Recipe 2: Brown Rice Flour Banana Pancakes

Ingredients:
- 2 bananas
- 2 eggs
- 1/4 cup water
- 1 cup brown rice flour
- 1/2 tsp baking powder
- pinch of salt
- dash of cinnamon (optional)
- 2 TBS maple syrup (optional)
- coconut oil (for cooking)

Directions:

1. Heat up your pan on low and melt coconut oil to coat base of pan. We love using cast iron pans!

2. Place wet ingredients into the blender. Blend. Add dry ingredients and blend again.

3. Cook your pancakes. Flip once you see bubbles in the pancakes and the edges are golden brown.
